2 Cups All-purpose Flour
1 Cup White Sugar
2 Teaspoons Baking Powder
2 Teaspoons Ground Cinnamon
1 Teaspoon Salt
1 Cup Milk with 1 Tablespoon White Vinegar
1/4 Cup Vegetable Oil
2 Large Eggs
1 Teaspoon Vanilla Extract
2 Apples, Peeled, Cored, and Diced
Preheat the oven to 350*F and grease a 9″ X 5″ inch loaf pan.
In a bowl, toss the diced apples with 1 teaspoon cinnamon and 1/4 cup sugar, and set aside.
In a 1 cup measuring cup, put 1 tablespoon of white vinegar and then fill the cup the rest of the way with milk. Let sit for a few minutes.
In a large bowl mix together the oil, milk, eggs, and vanilla until smooth.
Add in the flour, baking powder, salt, remaining ground cinnamon and sugar.
Stir until smooth.
Add the diced apples and fold into the batter.
Pour the batter into the prepared pan and bake for 50 minutes or until a knife inserted into the cake comes out clean.
Cool to room temperature before slicing.
