4 cups old-fashioned rolled oats
2 cups sliced almonds
3/4 cup coconut oil, warmed to liquid
3/4 cup raw honey
1 cup raisins
1 cup dried chopped pineapple
1 ½ cup dried cranberries
and whatever other dried fruit or nuts you want to throw in
Preheat the oven to 325 degrees F.
Toss the oats and almonds together in a large bowl.
Whisk together the oil and honey in a small bowl. Pour it over the oat mixture and stir until all the oats and nuts are coated. Pour onto a cookie sheet. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 25 minutes.
(I think its 20-30 minutes. I just take it out when it smells good and is golden brown)
Remove the granola from the oven and allow to cool, stirring occasionally. Add the dried fruit.
Store the cooled granola in an airtight container.
