Recipe: Quinoa Pizza Bites

Tasty little bites!

Quinoa Pizza Bites

Makes ~40 bites

2 cups cooked quinoa

2 large eggs

1 cup chopped onion

1 cup shredded mozzarella cheese

½ cup shredded parmesan cheese

3 tsp minced garlic

¾ cup fresh basil, chopped

1 cup chopped portabella mushrooms (sauté in a little olive oil or butter)

1/2 tsp sea salt

1 tsp paprika

2 tsp dried crushed oregano


Preheat oven to 350 degrees.  Mix together all ingredients.

Spoon mixture into greased mini muffin tins, filling each cup to the top and press down to make it more cohesive and bake 20 minutes.

Serve with marinara sauce for dipping.


Other ideas: 

Chopped pepperoni instead of mushrooms.

Feta and spinach with sundried tomatoes.

Goat cheese and candied nuts with a marmalade dipping sauce for a sweet treat!

  1. YUM! I’m so adding these to my meal plan for next week. I have a bag of quinoa in my freezer not being used because I don’t know what to do with it, so thank you!! I know my family will love them…

    With the goat cheese as a substitute for the other cheeses, and peperoni instead of the mushrooms, this looks like something we could BOTH safely eat. It also looks pretty tasty. We’ll definitely have to try it.

  3. Made these and I’m eating them right now. Charlie and I love them. I split it in half so he could have olives and I could have pepperoni. Highly recommend this.
