Quinoa Pizza Bites
Makes ~40 bites
2 cups cooked quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
½ cup shredded parmesan cheese
3 tsp minced garlic
¾ cup fresh basil, chopped
1 cup chopped portabella mushrooms (sauté in a little olive oil or butter)
1/2 tsp sea salt
1 tsp paprika
2 tsp dried crushed oregano
Preheat oven to 350 degrees. Mix together all ingredients.
Spoon mixture into greased mini muffin tins, filling each cup to the top and press down to make it more cohesive and bake 20 minutes.
Serve with marinara sauce for dipping.
Chopped pepperoni instead of mushrooms.
Feta and spinach with sundried tomatoes.
Goat cheese and candied nuts with a marmalade dipping sauce for a sweet treat!
