Simple Pie Crust

I am terrified of pie crust…  This recipe has helped me work through my fear, its a day-to-day type thing, but my therapist and I are working it out.  I urge you to try making this recipe if you are also afraid to make your own pie crust.

1 and 1/4 cups of all-purpose flour

1/4 tsp salt

1/2 cup cold butter

1/4 cup of ice water

Mix together the dry ingredients.  Cut the butter into small pieces and cut it into the flour- I use my food processor for this part, pulsing it until I get a small crumb.

Drizzle the ice water in, incorporating it into the mixture until it just begins to form a dough.  Squish it gently into a ball and wrap it in saran wrap or waxed paper.

Refrigerate for about thirty minutes, or until you can get to it again.  Lightly flour your rolling surface and rolling pin, and roll it out.

You can then either fill your pie or bake the crust at 450 degrees for 8-10 minutes before filling it.

This recipe makes one crust, so double it if you are making a double crust pie.

  1. I wonder if my all-purpose gluten-free flour mixture would work (I use Land O’ Lakes Recipe, consists of Brown Rice, potato, and tapioca with a bit of Xanthan Gum. You can find it online if you google it).
    I’ll have to try it!

  2. I finally got a chance to actually try and make this and it WORKED! My first pie crust to successfully make it into a pie pan is currently in the oven (as the crust of quiche lorraine)! Thanks again! When I post my quiche recipes on my blog, I’ll be sure to link back to this post for the pie crust recipe!
