Recipe: Sugar Cookies with Chocolate Frosting

Sugar Cookies

  • 1 cup butter softened
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup milk

  1. Cream butter and sugar. (I use a standing mixer)
  2. Add eggs and vanilla.
  3. Combine dry ingredients; add to creamed mixture. Mix.  Add milk.  Mix.  Cover and refrigerate for 1 hour.
  4. On a floured surface, roll out dough to desired thickness. Thinner dough will make crispy cookies.
  5. Cut out cookies into shapes and place on a greased baking sheet. Bake at 350 degrees F for 10 minutes or until edges are lightly browned.

*You can add the zest and juice of a lemon, lime, or orange for more flavor if you don’t want to top them with chocolate.  This is our favorite way to eat them!

Chocolate Frosting

  • 4 tablespoons butter
  • 1/2 cup packed brown sugar
  • 2-3 tablespoons milk
  • 2 cups confectioners’ sugar
  • 2-3 tbsps unsweetened cocoa powder
  • 1 teaspoon vanilla extract

  1. In a saucepan, melt butter and brown sugar over medium heat. Stir until sugar is dissolved, then add milk. Bring to a boil and remove from heat.
  2. Blend the cocoa and confectioners sugar into butter mixture and add vanilla. If the frosting is too stiff, add more milk.  You can also change the amount of cocoa for a more or less chocolate taste.
  3. Spread quickly onto cookies as the frosting will set up very fast.  You can wisk it up to make it smooth again.
